Have you ever heard of umeboshi?

It is a superfood that has been part of Japanese food culture for centuries. You might be surprised how sour they are. Today the weather is nice, so I am drying my salted plums to finish my pickled plums.
The Japanese national flag, Hinomaru, is white with a red circle, and because of its resemblance, a bento with red pickled plums on rice is called a Hinomaru bento.
My grandmother used to make umeboshi, but the old-fashioned pickled plums were very sour and salty, and I did not like them.
Nowadays, however, there are many umeboshi that are less salty, mildly salty, and delicious. The pickled plums I make also contain honey and have a mildly salty and sour taste, but they make my body feel better.
If you come to Japan, please try this power food, “umeboshi”!

To make bright red pickled plums, add red shiso. The flavor changes and it is delicious.
